There is something special in baking at home, isn’t it? And it’s even better if you take out a tray of fragrant vegan cinnamon rolls, warm, fluffy, delicious. I thought it would be more difficult to prepare them, but not at all. It takes some time, yes, but they are easy and sooo good. You definitely have to try!
Ingredients
- 1 tablespoon vegan butter for the pan
[Dough]
- 240 ml almond milk, at room temperature
- 60 g vegan butter, melted
- 25g sugar
- ½ packet active dry yeast
- 300 + 50 g flour
- ½ teaspoon salt
[Filling]
- 90 g vegan butter
- 85 g brown sugar
- 1 tablespoon ground cinnamon
[Icing]
- 80 g powdered sugar
- 1 tablespoon almond milk
- ¼ teaspoon vanilla extract
Instructions
- Put the almond milk, vegan butter and sugar in a bowl and heat in the microwave. The mixture shouldn’t be too hot, just warm. Stir in the yeast until dissolved. Set aside for 5 minutes so the yeast can activate.
- Add in 300 g of flour and salt. Mix with a wooden spoon until combined. Cover the bowl with a towel and set in a warm place to rise for 1 hour.
- After 1 hour, the dough should have nearly doubled in size. Remove the towel and add an additional 50 g of flour. Stir well, then turn out onto a well-floured surface. Knead the dough lightly, adding additional flour as necessary, until it’s no longer sticky to the touch. The dough should be smooth and elastic. Roll the dough out into a large rectangle, about 1 cm thick.
- Spread the softened vegan butter over the dough, covering the entire surface. Sprinkle evenly with brown sugar and cinnamon.
- Roll up the dough, placing seam-side down. Cut the log in half, then divide each half into 6 slices.
- Butter a pan with 1 tablespoon of vegan butter. Place the cinnamon rolls on it, not too close as the dough will rise. Cover with a towel and set in a warm place for 30 minutes.
- Preheat oven to 180˚C. Uncover the rolls and bake in the preheated oven for 25 minutes, until lightly golden.
- In the meanwhile, prepare the frosting. Sift powdered sugar into a mixing bowl, add the almond milk and vanilla extract and whisk until smooth. Pour over warm cinnamon rolls.
- Let cool for a few minutes and then serve.
Recipe notes
- I used half strong and half all-purpose flour. You can use only all-purpose flour if you prefer.
- You can freeze leftovers, just wrapping them with plastic wrap. Then leave them out at room temperature and reheat in the microwave for 1-2 minutes.
